Onion, Bacon and Spinach Pizza

What You'll Need:

  • 1 pizza dough (homemade or store-bought)
  • 5 slices bacon, cooked and chopped
  • Olive oil, for drizzling on pizza
  • 10 oz mozzarella cheese, shredded
  • 6 oz parmesan cheese, finely shredded
  • 4 oz baby spinach
  • 1/4 red onion, sliced
  • Salt and pepper
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp butter
  • 1 large garlic clove, minced
  • 2 Tbsp flour
  • 3/4 cup milk

Preparation:

  1. In a small saucepan, melt butter over medium heat.
  2. Add flour and garlic and cook, stirring constantly, for 1 minute.
  3. While whisking, slowly pour milk into the flour mixture.
  4. Season with salt and pepper to taste and bring mixture just to a boil, stirring constantly. Then remove from heat.
  5. Sprinkle Corn Meal on your pizza peel to prevent dough from sticking, then lightly flour it as well. Roll out your dough ball to about a 10-12 inch circle.
  6. Spread white sauce evenly over pizza.
  7. Top with the mozzarella and parmesan cheese, then add spinach, bacon, and onions.
  8. Lightly drizzle with olive oil.
  9. Using a pizza peel, transfer pizza to a preheated pizza oven and bake for 2 to 3 minutes. Rotate the pizza 180 degrees halfway through.
  10. Bake until cheese is melted and crust is golden. Lightly drizzle with balsamic vinegar, and serve!
